天野屋:神田明神に見守られ、米と糀だけで作る伝統の「甘酒」
Amanoya: Using only rice and fermented koji to make traditional amazake in the shadow of Kanda Shrine
みよちゃん セインさん。今日は神田明神の鳥居のすぐ脇にある天野屋にうかがいます。弘化3年(1846)創業の甘酒屋さんです。さあ、入りましょう。
Thayne-san, today we’ll be visiting Amanoya, located right outside the symbolic gate of Kanda Shrine. It’s an amazake shop established in 1846.

セインさん こんにちは、天野さん。実は僕は、このお店に以前、来たことがあるんです。神田明神でお参りして、そのあと、お店で甘酒を飲んで一服しました。日本らしいステキな建物だし、アンティークの時計や鉄道模型などがたくさん飾られていて、とってもいい雰囲気ですよね。
Hello, Amano-san. I’ve actually been to this shop before. I visited Kanda Shrine and, afterwards, I took a break here and drank amazake. It’s a quaint Japanese-style shop decorated with antique clocks, model-trains, and all kind of collectibles, so it has a wonderful atmosphere.
みよちゃん セインさん、天野さんのアンティーク・コレクションは、その筋でも有名だそうですよ。
Thayne-san, Amano-san is also famous for his antique collection.


神田明神の鳥居のすぐ脇にある「天野屋」。1年中、参拝客でにぎわっている。店内にはアンティークの掛け時計や鉄道模型、ランプなどがいっぱい。
Amanoya: located right outside the Torii gates of Kanda Shrine. Bustling with customers year-round, the interior of the shop is filled with antique clocks, model trains, and lamps.
セインさん それはすごい! 甘酒屋さんに生まれていなかったら、何をされていたでしょう。
That’s amazing! What do you think you’d be doing if you hadn’t been born into the Amanoya family?
(天野) 機関車の整備とか、そういう仕事にはあこがれがありましたね。
Locomotive maintenance or that sort of career always fascinated me.
セインさん その夢は、ちゃんと、趣味で満たされているんですね!
ところで、天野さんは何代目ですか?
You’ve certainly fulfilled that dream with your hobbies!
By the way, Amano-san, what generation are you in the family business?
(天野) 6代目です。初代は京都の人で、弟の仇討ちのために江戸にやってきて、その相手を見つけるために、諸国から人が集まる神田明神のお膝元で店を構えたと伝えられています。
I’m the sixth generation. The founder was from Kyoto and came to ancient Tokyo to avenge his younger brother. It is said that in order to find his enemy, he established his shop on the grounds of Kanda Shrine, where people from all over the country gathered
セインさん 初代の方は、仇に会えたのでしょうか?
Was the founder able to get revenge?
(天野) いや、とうとう会えなかったそうです。
No, I heard he never found his enemy.
みよちゃん それは残念! いや、もし仇に会っていたら、今、私たちが、ここでおいしい甘酒を飲むことができなかったかもしれませんね。(笑)
That’s a shame! Well, if they had met, we might not be here drinking this delicious amazake.
天野屋の甘酒。夏は冷やして、冬は温ためて。どちらもおいしい。添えられているのは、これも名物の「久方味噌(なめみそ)」。
Amanoya’s amazake is served cold in summer and hot in winter with a salty miso paste, which is another famous Amanoya treat. .
(天野) では、まずは甘酒をどうぞ。

セインさん おいしい! ちょうどいい甘さですね。江戸の人も大好きだったでしょうね。
It’s delicious! It’s the perfect level of sweetness. The old-time people of Tokyo probably loved it too.
(天野) 砂糖はまったく入っていないんですよ。発酵が生み出す、自然の甘みです。また、よく間違われるのですが、甘酒はアルコール分もありません。ですから、大人から子どもまで、江戸庶民が日常的に「甘味」として楽しめました。しかも主成分はブドウ糖ですから、滋養にもよい。体力を奪われる夏には特に喜ばれて、よく飲まれていたようです。
It doesn’t have any sugar. The natural sweetness comes from the fermentation. A lot of people don’t know this, but amazake contains no alcohol. That’s why the common people of old-time Tokyo, from adults to children, enjoyed the sweetness everyday. The main ingredient is glucose.
セインさん 甘酒を作るには、どのくらいかかりますか?
How long does it take to make amazake?
(天野) 甘酒の原料は、米と糀です。
まず1日目は米を洗って水に浸けます。2日目は朝からその米を蒸し上げ、ひと肌くらいに冷めたら糀菌を植え付けて、地下の土室(むろ)で寝かせます。発酵が進んでいくと、温度が上がりすぎてしまいますので、途中、何度も、蒸し米を広げたり混ぜたりと、手入れをして1次発酵させます。3日目は朝から、蒸し米を発酵室に移して、温度38~40℃、湿度100%の環境の中でゆっくりと2次発酵させます。この日も何度も何度も小まめに手入れをします。4日目の朝には糀が出来上がっていますので、この糀に同量のご飯を足して60℃の部屋で10時間ほどおきます。これで甘酒の出来上がりです。ですが、うちではそれからさらに2日間、熟成させて仕上げます。つまり、仕込みから出来上がりまで、ちょうど1週間ということになります。
The raw materials for amazake are rice and fermented koji.
Initially, the rice is washed and soaked in water on the first day. On the morning of the second day, the rice is steamed then cooled to around skin temperature. The koji mold is added and the mixture is fermented in the cellar. The temperature rises during the first round of fermentation, so we hand mix and spread out the rice repeatedly. From the third morning, we move the rice to the fermentation room, where the temperature is between and 40 degrees and the humidity at percent. Under these conditions, the mixture undergoes the round of slow fermentation. On this day, we repeatedly do various hand-on processing. On the morning of the fourth day, the amazake is basically finished, but it’s then matured for an additional two days. In other words, the process takes about one week from start to finish.
セインさん 工場はどこにあるのですか?
Where’s the factory?
(天野) ここですよ。土室(むろ)は当店の地下6mのところにあります。ご覧になりますか?
It’s right here, in a cellar six meters below the shop. Would you like to see it?
セインさんみよちゃん 地下ですか! ぜひ、ご案内ください。
In the basement?! Yes, we’d love to see it.
 
店の地下6mに造られた土室。ここで、糀が造り出される。
The cellar, six meters below the shop, is where the koji mold is created.
セインさん これが土室ですか。すごい! ちょっとひんやりしますね。
This is the cellar? Wow! It’s a little chilly, isn’t it?
(天野) 土室の気温は、1年を通して18度~20度です。ですから夏は涼しいと感じますし、冬は暖かく感じます。
The cellar stays between 18 and 20 degrees year-round, so it feels cool in summer and warm in winter.
みよちゃん 壁面や天井を良く見ると、糀菌が集まっているのが見えますね。
If you look closely at the walls and ceiling, you can see a buildup of koji mold.
(天野) この土室に棲みついている菌です。これが天野屋の甘酒の味を作ってくれているわけです。
The mold that lives in this cellar gives Amanoya’s amazake its distinct flavor.
みよちゃん 先ほど、糀の造り方で、何度も「手入れする」という言葉を使われましたが、本当に機械などはほとんど何もなくて、手作業で作られているのですね。
You mentioned earlier that processing this mold requires repeated hands-on maintenance, so you mean you really use your hands and not any sort of tool?
(天野) はい。糀が生き生きと発酵するためには温度調節が重要ですし、発酵が進む温度は雑菌も繁殖しやすいので、そういう不要な菌を増やさないようにすることも大事です。甘酒だけじゃなくて、当店のなめ味噌「久方味噌」も、味噌汁用の「江戸味噌」も、この土室で作る糀をもとに醸造しています。
That’s right. In order for the mold to ferment and stay active, it’s important to regulate the temperature. The temperature that promotes fermentation is also ideal for the microorganisms to reproduce, so it’s important to keep unnecessary mold from multiplying. Not only amazake, but also our Hisakata Miso [eaten as a flavoring with rice, etc.] and miso soup-based Edo Miso are distilled using the koji from this cellar.
セインさん 味噌も、ここで作っているんですか?!
You also make miso here?!
(天野) はい。添加物などを使わない、1年がかりで作る本物の味噌ですよ。納豆も、糀菌と混ざらないように特別に仕切った部屋で作っています。大粒の大豆を使った、しっかりと豆の味がする「芝崎納豆」、こちらもぜひ味わってみてください。工場の1階もご案内しましょう。
Yes, we do. We don’t use any additives and it’s genuine miso that takes a year to make. The miso and natto are made in separate rooms, so it doesn’t mix with the koji mold. Our Shibasaki Natto uses large that give off a true bean flavor. Have a taste. I’ll also show you around the first floor of the production area.

セインさんみよちゃん コンパクトだけど、よく整理されていて、清潔感があって、すばらしい工場ですね! 大都会東京の真ん中でいろいろな発酵食品が生まれているなんて、ちょっと不思議な感じもしましたが、感動しました。
It’s compact, but very well organized and seems quite clean. It’s a wonderful factory! It’s a bit unexpected that various fermented food products are created in the middle of Tokyo. I’m impressed!
(天野) 家族と親戚だけの小さな工場ですが、手間ひまをかけ、昔からの味を変えないように心がけています。ものを作っていると、あれこれいじりたくなるものですが、そうすると変なものを作ってしまう。
It’s a small family-run factory, but we put our whole heartーplus our time and effortーinto making sure the flavor remains unchanged over the years. When you make a product, you might want to try out different things, but that can have strange results.
セインさんみよちゃん 味を変えない、その気持ちと努力が、お店の歴史を次の世代へとつなげられる秘訣になっているのですね。
